Council Staff's Favorite Cookie Recipes

Mom's Oatmeal, Peanut Butter, Chocolate Chip Cookies
  • 1-1/2 cups oats
  • 2 cups flour
  • 1 tsp baking power
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup white sugar
  • 1 tbsp vanilla
  • 3/4 cup peanut butter
  • 2 eggs
  • 12 oz chocolate chips

Step 1: Crush 1 cup oats until fine. Stir ground oats and 1/2 cup whole oats, flour, baking powder, baking soda, and salt in a bowl. (Put dry ingredients together)

Step 2: In mixer bowl, beat butter and both sugars until fluffy. Add vanilla and peanut butter. Add eggs one at a time. Beat well. Add dry ingredients slowly.

Step 3: Chill in refrigerator for 2 hours. 

Step 4: Preheat oven to 325. Bake in middle of oven for 15 minutes.

Mom's Chocolate Chip Cookies
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 stick melted butter

Mix together, then add:

  • 2 cups flour
  • 1 tsp baking soda
  • Chocolate chips and nuts

Bake at 350 till done
